Same great flavours as our version with lamb, Vegetarian Harira Stew will please vegetarians and non-vegetarians who prefer not to eat lamb but desire the taste of Morocco that this recipe delivers.

Bursting with flavour and aromas, this entrée is the fourth entry on Yamnuska Backcountry Kitchen’s menu of vegetarian dehydrated dinners. Like it’s lamb-based counterpart, this dinner is perfect to add variety and interest on  multi-day backcountry menus, as well as being a delicious feature after a long day on an overnight trip. Instant brown rice is included in the package.

Slivered almonds and sliced dried apricots are a great topper just prior to eating.

Preparation Instructions for 1 package of Vegetarian Hariri Stew Dehydrated Dinner

Keeping hydrated is even more critical when you consume foods that have had their moisture removed to keep from spoiling outside of the fridge and freezer. Proper re-hydration prior to consumption is very important. In high impact or long endurance activities, keeping your body properly hydrated is challenging and can on its own create issues with energy levels, strength and concentration. We have some tips for staying hydrated in the backcountry.

  • Mix contents of package and 650ml of water in a 1 L pot.
  • Bring to a boil.
  • Cover, turn off heat, and let stand 15 minutes or longer.
  • Return the mixture to boil,
  • Reduce heat and simmer for 10-12 minutes. Times vary depending on altitude and temperature.
  • Continue to rehydrate until the desired texture is achieved.
  • Season to your personal taste & serve.
