Inspired by the good food of southern Louisiana, our Red Bean dehydrated dinner entree is a great way to get a taste of the Bayou while on your adventures in the backcountry. We do like to keep things interesting here in the Yamnuska Backcountry Kitchen and this recipe is one result.

It all begins with chorizo sausage crumble dancing together in the sauté pan with fresh sweet bell peppers, onions, garlic plus all of the spices you would expect in a dish inspired from the creole cuisine of Louisiana. Plum tomatoes and red kidney beans are added and they all stew together slowly under Chef’s tender guidance until the flavours and textures are just right!

Recently introduced on our backcountry kitchen menu of dehydrated dinner entrees, Louisiana Red Bean with Spicy Sausage is an amazing blend of flavours that delivers high-quality calories and protein. For an extra special dinner bring along a few crayfish or shrimp to join the party.

Recipe Inspiration & History

Driven by the constant desire to keep our menu of dehydrated dinners fresh and interesting, we are always looking for inspiration and this time we turned our focus to southern Louisiana where the food is a blend of the cultures of the people that settled there, Influences include West African, French, and Spanish - among others - and creole cuisine is not overly hot - just flavourful and a joy to eat!

Preparation Instructions for 1 package (150g) of Louisiana Red Bean with Spicy Sausage Dehydrated Dinner.

Keeping hydrated is even more critical when you consume foods that have had their moisture removed to keep from spoiling outside of the fridge and freezer. Proper re-hydration prior to consumption is very important. In high impact or long endurance activities, keeping your body properly hydrated is challenging and can on its own create issues with energy levels, strength and concentration. We have some tips for staying hydrated in the backcountry.

  • Mix contents of package and 650ml of water in a 1 L pot.
  • Bring to a boil.
  • Cover, turn off heat, and let stand 15 minutes or longer.
  • Return the mixture to boil,
  • Reduce heat and simmer for 10-12 minutes. Times vary depending on altitude and temperature.
  • Continue to rehydrate until the desired texture is achieved.
  • Season to your personal taste & serve.
