Yamnuska Backcountry Kitchen’s Hawaiian Chicken dehydrated dinner entrée is a pleasing blend of western and asian influences. Our recipe for this dinner takes it’s flavour cues from traditional pineapple chicken recipes commonly found in north american cookbooks.

Plus we add a hint of asian flavourings and the sharpness of savoury coconut to produce a tasty chicken dish with a pleasing balance of tangy and sweet. Unlike many versions of this dish, our recipe is not overly sweet and no extra sugar is added during cooking.

The combination of red & green bell peppers simmering together slowly with pieces of pineapple in a lite coconut sauce produces a rich and flavourful chicken dish that is a consistent crowd pleaser.

Best served over rice, we always bring extra portions on our trips for the inevitable request from our guests “….please, may I have some more?”

Suggestions for Serving our Hawaiian Pineapple Chicken

  • Sprinkle toasted savoury coconut shreds on top prior to serving.

Preparation Instructions for 1 package of Hawaiian Pineapple Chicken Dehydrated Dinner

Keeping hydrated is even more critical when you consume foods that have had their moisture removed to keep from spoiling outside of the fridge and freezer. Proper re-hydration prior to consumption is very important. In high impact or long endurance activities, keeping your body properly hydrated is challenging and can on its own create issues with energy levels, strength and concentration. We have some tips for staying hydrated in the backcountry.

  • Mix contents of package and 650ml of water in a 1 L pot.
  • Bring to a boil.
  • Cover, turn off heat, and let stand 15 minutes or longer.
  • Return the mixture to boil,
  • Reduce heat and simmer for 10-12 minutes. Times vary depending on altitude and temperature.
  • Continue to rehydrate until the desired texture is achieved.
  • Season to your personal taste & serve.
