Diets, Allergies & Food Sensitivities

Our professional kitchen team considers all food intolerances and allergies very carefully when preparing food for our guests and for public sale in the online shop. The backcountry is no place for an allergic reaction where assistance may be hours or days away.

Managing Allergens in the Kitchen

Food allergies can be difficult to manage at any time. Experiencing an allergic reaction in the backcountry where help can be hours or days away, is definitely not the time.  Food allergies are serious and our chef manages common allergens in the kitchen very carefully to reduce the risk of cross-contamination in a facility not designated as an allergen-free facility. Common Foods found in the Yamnuska Backcountry Kitchen include:

  Products containing gluten

  Fish
  Shellfish

Food Programs for Huts & Camping

Full trip catering is complex for managing allergies, especially larger groups with multiple needs. We have extensive experience with a variety of food allergies & intolerances, from feeding guests in the backcountry. And, we can typically accommodate most non-complex requirements in our food programs.

It is critical you identify any diet restrictions, food allergies, or intolerances when discussing menus and pricing with our chef. If we can’t accommodate your specific needs and keep you safe with regards to food in the backcountry, we will be upfront.

While we take every measure to ensure the quality and integrity of our food, please be aware that we do not isolate common allergens from any of our products. Those who suffer from very serious and  life-threatening reactions to any food should consider packing and preparing their own meals while dining with a group in the backcountry.

Diet Considerations

We routinely provide vegetarian, vegan, low-dairy and  low-gluten options on our backcountry menus and  information about the suitability of each of our dehydrated dinner entrées for various diets, is  included with additional information for the individual meals in our online store.

Gluten Allergies

The Yamnuska Backcountry Kitchen routinely manages gluten sensitivities and diet-related preferences on our backcountry food programs. If you have celiac disease, please contact our chef to discuss; we will decide together how best to keep you food-safe while using one of our food programs or consuming our dehydrated dinner entrée products in the backcountry. When our recipes have no known ingredients that contain gluten, we will add No Added Gluten under the Additional Information tab on the product page for that item. Please note our packaged dinner products have not been certified gluten-free.

Lactose Allergies

Although the Yamnuska Backcountry Kitchen can provide alternatives for dairy cheese and dairy milk products on our food programs, our dehydrated dinner products are not certified dairy-free. We do note in additional information included with each product in our shop when a product has no added dairy. Please read lists of ingredients carefully and ask us if you have any questions.

Peanut and Tree Nut Allergies

Peanut and tree nut allergies are some of the most common, and the most concerning, among the food allergens we manage in the backcountry. To be successful keeping guests food-safe from nuts requires common sense, good communication and unwavering diligence, especially with severe and life threatening reactions possible. We strongly recommend people with serious reactions consider packing & preparing their own food when on group trips in the backcountry, That said, we have kept our guides and guests with severe nut allergies safe on our trips by following the requirements for success mentioned above.
